Buttermilk Sugar Cookies

Ingredients
2 cups Rayne’s Mill Buttermilk Pancake Mix
1/2 cups sugar
1 tsp baking Powder
1 tsp baking soda
1/8 tsp salt
1/2 cup butter
1 eggs
1 teaspoons vanilla extract
1. Preheat oven to 350 °F.
2. In a large mixing bowl cream together the butter, sugar and salt until smooth. Stir in 1 egg and
buttermilk and combine until well mixed.
3. Add Pancake Mix, baking soda ,baking powder and the vanilla extract combine until well mixed. and add the vanilla extract until well mixed.
4. Dough will be very soft! Refrigerate for at least an hour before baking.
5. Drop heaping teaspoons of dough 2 inches apart each other onto an cookie sheet.
6. Bake for 10 - 12 minutes or until done. Remove from cookie sheets to cool.
ICING:
1. In a small bowl combine powdered sugar, vanilla, cocoa powder and a small amount of milk and stir
well to remove any lumps.
2. Drizzle the chocolate glaze on cooled cookies.
